Scallops are one of my favorite ingredients to work with. They’re naturally tender and full of flavor and need little embellishment to create a great meal. These grilled scallops are coated in a quick marinade for the ultimate dinner with minimal work!

For this grilled scallops recipe you will need sea scallops, olive oil, lemon juice, garlic, Italian seasoning, salt and black pepper. You should have fresh parsley and lemon wedges to garnish the scallops.

How To Buy Scallops

You want to use the large sea scallops for this recipe, not the small bay scallops. Look for shellfish that are uniform in size and color and smell fresh – they shouldn’t have a strong fishy aroma. You can typically find fresh scallops at the seafood counter of most grocery stores. Frozen scallops also work well, just make sure they’re completely thawed and pat them dry with a paper towel before use.

How Do You Make Grilled Scallops?

Start this grilled scallops recipe by whisking together olive oil, lemon juice, herbs, garlic and seasonings in a large bowl. Add the shellfish to the marinade and toss to coat. Soak the scallops for at least 15 minutes. Remove the seafood from the marinade and you can either thread the scallops onto skewers or grill them without skewers. Place the marinated shellfish on the grill and cook for a few minutes on each side until the they are opaque. Sprinkle with fresh herbs and serve with lemon wedges, then enjoy!

Tips For The Perfect Dish

  • I find it easier to thread small to medium size scallops onto skewers to grill them; that way you’ll be sure not to lose any of that precious seafood through the grill grates!
  • If you have extra large scallops and are looking for a more elegant presentation, feel free to grill them without skewers.
  • You can marinate your seafood in a covered bowl or a resealable bag.
  • This recipe works on both an outdoor grill and inside on a grill pan. You can also broil the the seafood in an oven.
  • You can buy Italian seasoning or make your own Italian seasoning.
  • Enjoy these grilled scallops with sides like grilled mushrooms, roasted red potatoes, grilled corn on the cob, asparagus salad or dill potato salad.

Quick Tip

Do not marinate your scallops for more than two hours. The lemon juice in the marinade can start to cook the scallops after that point.

How do you know when scallops are done on the grill?

Scallops go from perfectly cooked to tough very quickly, so watch your seafood closely so that it does not overcook. The shellfish will need to cook for 1-2 minutes per side. You’ll know when they are done because the flesh will be firm and opaque.

How do you keep scallops from sticking to the grill?

To keep your scallops from sticking to an outdoor grill, you’ll want to 1) Make sure your grill grates are very clean. 2) Brush your grill grates with vegetable oil before you place the seafood over the heat. 3) Make sure to pre-heat your grill before you add the scallops.

Is it better to grill or pan sear scallops?

Both pan seared scallops and grilled scallops are amazing, which method you chose is up to you. If you like more caramelized crust on the shellfish, you might want to pan sear them. If you like scallops infused with a delicious smoky flavor, cook them on a grill!

Flavor Variations

These grilled scallops are delicious as-is; however, you can change the flavor to suit your own taste.

  • Spicy: Add crushed red pepper flakes to the marinade for some heat.
  • Butter: You can brush melted butter on the shellfish when they are close to done cooking.
  • Citrus: Feel free to add orange juice or lime juice to the marinade for extra flavor.
  • Seasonings: When you put the shellfish on the grill, you can add a little Cajun seasoning, blackened seasoning or fajita seasoning.

Ingredients 

  • 1 1/4 pounds large sea scallops
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 teaspoons minced garlic
  • 1 tablespoon chopped parsley
  • lemon wedges for serving

Instructions 

  • Place the olive oil, lemon juice, salt, pepper, Italian seasoning and garlic in a large bowl or resealable plastic bag. Stir to combine the ingredients.
  • Add the scallops to the bag or bowl. Toss to coat evenly with the marinade. Seal the bag or cover the bowl.
  • Refrigerate and marinate for at least 15 minutes or up to 2 hours. You don't want to marinate for longer than that, as the acid in the lemon juice will start to cook the scallops.
  • Thread the scallops onto skewers. This is optional, if you have very large scallops you can skip the skewers and toss them directly onto the grill.
  • Heat an outdoor grill or indoor grill pan over medium high heat.
  • Place the skewers or loose scallops on the grill. Cook for 1-2 minutes on each side or until scallops are firm and opaque.
  • Sprinkle with parsley and serve with lemon wedges.

    These were delicious and so easy to put together. I’ve cooked scallops by pan searing and they just don’t come out very good. But never again after trying your recipe. We were having shrimp and pineapple skewers but the shrimp were so small I added scallops to the menu. I had a few pieces of pineapple left so I added to the skewer with the scallops. Again delicious. Thank you for sharing your recipe.
